Ingredients

4 eggs
1/2 cup (125 mL) all-purpose flour
2 tsp (10 mL) paprika
1/2 tsp (2 mL) sage
1/4 tsp (1 mL) cayenne pepper
1/4 tsp (1 mL) salt
1/2 tsp (2 mL) pepper
3 cups (750 mL) canola or safflower oil
2 fryer chickens, cut into serving pieces

Directions

This is a traditional southern American fare. Alter the spiciness of the fried chicken to your taste. When we made this dish on air, the cameramen fought over who was going to get more.

In a bowl, beat eggs. In a shallow baking dish, mix flour, paprika, sage, cayenne, salt, and pepper. In a deep-fryer or deep skillet, heat oil to high. Dip chicken quickly into eggs. Dredge chicken in the flour mixture. Carefully place 4 pieces of chicken at a time in the oil and deep fry for 15 minutes or until chicken is golden. Drain on paper towels.

Makes 4 servings

Tip: Buy already cut up chicken. Microwave chicken for 3 minutes; do not overcook it. For less spicy chicken, replace the cayenne pepper with paprika or leave it out completely.

Suggestion: As a side dish, why not try garlic mashed potatoes with dill peas and sautéed onions.
