Special diet :
4 tuna steaks, each weighing about 170 g (6 oz)
10 mL (2 tsp) coriander seeds
10 mL (2 tsp) cumin seeds
5 mL (1 tsp) dried crushed chilies
5 mL (1 tsp) black peppercorns
Finely grated rind and juice of 1 large lemon
Preheat the oven to 190°C (375°F). Cut four pieces of nonstick baking paper, each large enough to hold one tuna steak in a package easily. Place a tuna steak on each piece of paper. Put the seeds, crushed chilies, peppercorns, and salt in a mortar.
Using a pestle, crush the spices to break them up a little. Stir in the lemon rind. Scatter the spice mixture evenly over the fish steaks, then drizzle a little lemon juice over each one. Fold the paper over the fish and twist the edges to secure, making four packages.
Transfer the packages to a baking tray and bake for about 20 minutes, until the fish is cooked and the flesh flakes when tested with a fork. Place the unopened package on a warmed serving plate and serve immediately with cooked fresh vegetables such as new potatoes, baby corn, and carrots.
Makes 4 servings.
