Ingredients

500g broccoli
1 tablespoon extra-virgin olive oil
3 to 4 large garlic cloves, thinly sliced (optional)
1 large or 2 small red bell peppers, seeded and cut into chunks
1 small turnip, peeled and cut into bite-size chunks
Leaves from 8 sprigs fresh basil, finely shredded
Salt

Directions

  1. Cut the broccoli into small flowerets; trim and thinly slice the stems; set aside. Heat the olive oil in a large, nonstick skillet or wok over high heat. Add the garlic, if using, the red bell pepper, turnip, and the broccoli stems. Sprinkle in the sugar and salt to taste. Sauté, stirring, 2 to 3 minutes.
  2. Add the broccoli flowerets and stir. Pour in 6 tablespoons of water to provide a thin covering on the bottom of the skillet or wok. Cover and cook over medium-high heat until the broccoli is crisp-tender and bright green, 3 to 4 minutes.
  3. Stir in the basil, re-cover and leave over the heat for a few more seconds. Serve immediately.
