8 large onions
1/2 tsp (1 mL) salt
1can (14 oz/398 mL) tomatoes
1/2 lb (225 g) lean ground beef
1 clove garlic, finely chopped
1 tsp (5 mL) dried parsley
1/2 tsp (2 mL) dried basil leaves
1/4 tsp (1 mL) dried oregano leaves
1/4 tsp (1 mL) salt
1/8 tsp (1/2 mL) pepper
2 tbsp (30 mL) grated cheddar cheese, low fat
Directions
Slice tops off onions and peel. In large saucepan, sprinkle onions with 1/4 tsp (1 mL) salt, cover with boiling water and simmer, covered, 10 minutes. Drain and cool. Carefully cut centres from onions, leaving shells 1/2 inch (1 cm) thick. Chop onion centres by hand or in a food processor. Drain canned tomatoes, reserving juice. In large skillet, brown beef. Drain off fat.
Add chopped onion, drained tomatoes, garlic, parsley, basil, oregano, salt and pepper. Cool 10 minutes over medium heat. Stuff filling into onion shells. Place in flat casserole or baking dish. Pour reserved tomato juice around stuffed onions. Top onions with grated cheese. Bake at 350 °F (180 °C) 15 to 20 minutes until onions are tender.
Makes 4, 2-onion servings.
