1 package (256 g/8 oz) cream cheese or light cream cheese, at room temperature
30 mL (2 tbsp) milk
52 mL (3 1/2 tbsp) finely chopped mango chutney or apricot preserves
5 mL (1 tsp) Dijon mustard
128 g (4 oz) boiled or baked ham, finely chopped
30 mL (2 tbsp) minced parsley
9 medium-size stalks celery, trimmed to 20 cm (8 inch) lengths
36 celery leaves (optional garnish)
- Beat the cheese with the milk in a small electric mixer bowl at high speed until creamy — about 2 minutes. Add the chutney and mustard, beat just enough to combine, then fold in the ham and parsley with a wooden spoon.
- Stuff the hollow of each celery stalk with 45 mL (3 tbsp) of the cheese mixture. Cut each stalk into four 5 cm (2 inch) lengths and garnish each piece, if desired, with a celery leaf.
