Ingredients
- 4 pkts Quaker® Regular Instant Oatmeal
- 2-2/3 cups skim milk
- 1/4 cup white cheddar shredded
- 2 tbsp fresh parsley divided
- 1/2 cup cherry tomatoes halved
- 1/2 cup cucumber diced
- 2 hard boiled eggs quartered
- 1/4 tsp salt
- 1/4 tsp ground black pepper

Instructions
- Cook oatmeal with milk in individual microwave-safe bowls according to package directions. Stir 1 tbsp and 1 tsp parsley into each serving.
- Top each serving with cherry tomatoes, cucumber and half an egg. Sprinkle with salt, pepper and remaining parsley. Serve with hot sauce if desired. Top with leftover cooked vegetables, like broccoli, asparagus or squash.
