Sautéed Pears and Apples with Blue Cheese

Ingredients

2 apples, cored
1 Bartlett pear, cored
1 tbsp olive oil
1 small red onion, sliced
1/2 cup (125 mL) unsweetened apple juice
1/2 cup (125 mL) chopped fresh mint
2 tbsp (30 mL) crumbled blue cheese

Directions

You can serve this fabulous side dish on top of fish or grilled chicken. If you don’t have pears or apples, feel free to choose any fruit you can get year-round.

Cube the fruit. In a sauté pan, heat the oil and sauté the onion for about 3 minutes until translucent. Stir in the apple juice, mint, pear, and apple and mix well; sauté on medium heat about 10 minutes. Add the blue cheese; sauté another minute. Can be served hot, warm or cold.

Makes 4 servings.

Kenny Kick: Replace the fruit with other firm fruit. Replace apple juice with pear juice or cranberry juice. Peaches can be used, but be careful not to overcook them. Add peaches separately so they sauté only about 3 minutes.
