3 salmon fillets (4 oz/125g each)
1 cup (240 mL) orange juice
2 cloves garlic, minced
1/2 cup (120 mL) bread crumbs
1/2 cup (120 mL) green onions, chopped
1/2 cup (120 mL) coriander, chopped
1/2 tsp (2.5 mL) paprika
1 tbsp (15 mL) dill
1 tbsp (15 mL) Dijon mustard
1/2 tsp (2.5 mL) salt
1/2 tsp (2.5ml) black pepper

Directions

If you love salmon, this is a delicious variation that’s great served either for lunch or dinner.

In a large skillet over medium heat, poach the salmon steaks in the orange juice 4-5 minutes or until light pink, turning once. Remove salmon and let cool. Discard skin and bones. Crumble salmon into a medium bowl and combine with remaining ingredients. If mixture is dry, add 1 tbsp (15 mL) of vegetable oil. Shape into 6 patties and broil for 10 minutes, turning once (you can also pan-fry the fishcakes in a little oil or in a nonstick pan with vegetable cooking spray). Serve with parsley and spicy aioli, jicama and pepper julienne salad.

Makes 3 servings.

Prepare this recipe in advance. Follow directions to the point where you’ve formed the patties. You can now keep them aside and then cook them 10 minutes before serving. Or you can cook them completely and just warm them before serving!
