Avocado and Strawberry Salad with Bruschetta

Ingredients

For salad:
1 tablespoon white sugar
1 tablespoon olive oil
1 1/2 teaspoons balsamic vinegar
1/2 avocado – peeled, pitted and sliced
5 strawberries, sliced (remainder from Monday’s lunch)
1 cup mixed greens
For bruschetta:

6 1/2-inch baguette slices (remainder from Monday’s lunch)
½ ripened, vine tomato (firm), finely diced
1 clove of garlic, minced
½ teaspoon dried basil
1 tablespoon olive oil
½ teaspoon salt

Directions

  1. For salad: In a small bowl, whisk together sugar, olive oil and balsamic vinegar. Set dressing aside. Place mixed greens in a bowl and top with sliced avocado and strawberries. Drizzle dressing over mixed greens, avocado and strawberries. Serve immediately
  2. For bruschetta: In a bowl, mix tomatoes, garlic, olive oil, dried basil and salt. Set mixture aside. Drizzle olive oil over baguette slices and toast for 3 minutes. Spread even amount of mixture onto each baguette slice. Serve immediately. Makes six pieces.
