2 navel oranges
30 mL (2 tbsp) lemon juice
10 mL (2 tsp) extra-virgin olive oil
5 mL (1 tsp) Dijon mustard
1 mL (1/4 tsp) salt
1.5 L (6 cups) shredded romaine lettuce
2 scallions, thinly sliced
125 mL (1/2 cup) diced avocado
The oranges and avocado team up to bestow a good portion of potassium on this sun-bright salad.
With a paring knife, remove the skin and white pith from the oranges. Working over a large salad bowl to catch the juices, cut between the membranes to release the orange sections; set aside. Add the lemon juice, oil, mustard, and salt to the orange juice in the bowl, whisking to blend. Add the lettuce and scallions, tossing well. Add the avocado and toss gently to combine.
Makes 4 servings.
