Rice with almonds and raisins

Ingredients

15 mL (1 tbsp) unsalted butter or margarine
250 mL (1 cup) white rice
250 mL (1 cup) water
250 mL (1 cup) low-sodium chicken broth
30 mL (2 tbsp) toasted slivered almonds
30 mL (2 tbsp) golden raisins
2 mL (1/2 tsp) salt
0.5 mL (1/8 tsp) black pepper

Directions

Melt the butter in a medium-size saucepan over moderate heat. Add the rice and stir to coat. Add the water and chicken broth; bring to a boil. Reduce the heat to low and simmer, covered, for 20 minutes or until all of the liquid is absorbed.

Remove saucepan from the heat; stir in the almonds, raisins, salt, and pepper. Let cool.

Makes 4 servings.
