Red-Fish-Blue-Fish Tartar Sauce

1 bunch fresh dill, washed and stems removed

1 bunch parsley, washed and stems removed

2 oz (60g) freshly grated horseradish (about ¼ cup/50mL)

2 oz (60 g) Dijon mustard (about ¼ cup/50 mL)
2 oz (60g) drained capers (about ¼ cup/50 mL)

2 oz (60g) drained gherkins (about ¼ cup/50 mL)

2 oz (60g) dill pickles with 2 tbsp (25 mL) juice (about ¼ cup/50 mL)
1 oz (30 g) garlic, peeled (about 4 cloves peeled garlic)
¼ cup (50 mL) lemon juice
2 tbsp (25 mL) hot sauce 

2 tbsp (25 mL) Worcestershire sauce

1½ tsp (7 mL) each sea salt and freshly ground black pepper
5 cups (1.25 L) mayonnaise


  1. In a food processor, blend to finely chop everything except the mayonnaise. Pulse in mayonnaise just until blended.
