2 mangoes, peeled and pitted
30 mL (2 tbsp) lime juice
125 mL (1/2 cup) sugar
50 mL (1/4 cup) plus 30 mL (2 tbsp) honey
500 mL (2 cups) fresh or frozen unsweetened raspberries
75 mL (1/3 cup) seedless raspberry jam
In a food processor, purée the mangoes with 175 mL (3/4 cup) of water, the lime juice, sugar, and 50 mL (1/4 cup) of the honey. Place in a metal pan and freeze for 2 to 3 hours or until almost frozen. Meanwhile, in the food processor, purée the raspberries, jam, and the remaining 30 mL (2 tbsp) honey.
Strain through a sieve to remove the seeds. Place in a metal pan and freeze for 2 to 3 hours or until almost frozen. Cut the frozen mango purée into chunks and process in a food processor until smooth; transfer to a bowl. Repeat the process with the raspberry purée.
Add the raspberry sorbet to the mango sorbet, swirl together, and return to the freezer to refreeze.
