1 cup (250 mL) white sugar
1/2 cup (125 mL) vegetable oil
2 tbsp (30 mL) pineapple juice
1 tsp (5 mL) vanilla extract
2 cups (500 mL) all-purpose flour
2 tsp (10 mL) baking powder
2 cups (500 mL) sliced pineapple
1/4 tsp (1 mL) grated nutmeg
1/4 tsp (1 mL) ground cinnamon
In a large bowl, using a beater, beat the eggs, sugar, oil, pineapple juice and vanilla for 3 minutes or until smooth. Add the flour, baking powder and salt. Beat the mixture until smooth, about 1 minute. Pour into a 9 inch x 13 inch greased pan and place the sliced pineapple on top. Sprinkle with nutmeg and cinnamon. Bake in a preheated 350ºF oven for about 30 minutes or until a toothpick inserted in centre of cake comes out clean.
