Pilaf with Pistachio and Pine Nuts

375 mL (1 1/2 cups) low-sodium chicken broth
15 mL (3 tsp) butter or margarine
2 mL (1/2 tsp) salt
1 mL (1/4 tsp) ground mace or ground allspice
150 mL (2/3 cup) uncooked long-grain white rice
50 mL (1/4 cup) pistachio nuts or chopped pecans
50 mL (1/4 cup) pine nuts or slivered almonds
Directions
In a medium-size saucepan, bring the chicken broth, 5 mL (1 tsp) of the butter, the salt, and mace to a boil over high heat. Stir in the rice. Lower the heat and simmer, covered, for 20 minutes or until the rice is tender and liquid is absorbed.
Transfer rice to a warm serving bowl. Meanwhile, in a small skillet, melt the remaining 10 mL (2 tsp) butter over moderate heat. Add the pistachio nuts and the pine nuts and cook for 1 to 2 minutes or until light golden, stirring frequently. Sprinkle the nuts over the rice. Serve with roast pork or chicken.
Makes 4 side-dish servings.
