  Pie Pastry (Makes enough for three 9-inch double-crust pies):
1 lb (500g) all-vegetable shortening
4 cups (1L) all-purpose flour
3/4 tsp (3 mL) salt
9 tbsp (135 mL) cold water (Approx.)
1 1/4 tsp (6 mL) white vinegar
   
  Pie mix:
8 apples, peeled and sliced thin
1/2 – 3/4 cup (125 – 175 mL) sugar
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) nutmeg (optional)
1 tbsp (15 mL) butter
1 egg, beaten

Directions

I stand by this pastry recipe — it has never failed me. It makes enough for three 9-inch double-crust pies.

In a medium bowl, cut shortening into pieces. Add flour and salt; with a knife or pastry blender, cut in shortening until covered with flour. Add the water and vinegar, and mix everything together (using your hands is the most effective method). Add more water if necessary so dough holds together. Roll out on lightly floured work surface for pies.

Pie mix: Line a 9 in (22.5 cm) pie plate with pastry. Arrange apples in layers in shell, sprinkling each layer with sugar, cinnamon and nutmeg (if using). Dot with butter and cover with top crust. Make several slits in top crust. Brush with some beaten egg and sprinkle with sugar. Bake at 425°F (220°C) for 15 minutes; reduce heat to 350°F (180°C) and bake for another 30 to 35 minutes, or until apples are cooked.
