375 mL (1 1/2 cups) Five Roses All Purpose Never Bleached Flour
7 mL (1 1/2 tsp) ground ginger
5 mL (1 tsp) ground cinnamon
2 mL (1/2 tsp) each baking powder, baking soda, salt and ground allspice
1 mL (1/4 tsp) ground nutmeg
75 mL (1/3 cup) soft margarine
75 mL (1/3 cup) granulated sugar
30 mL (2 tbsp) maple syrup
1 egg
250 mL (1 cup) buttermilk

Directions

Combine flour, ginger, cinnamon, baking powder, baking soda, salt, allspice and nutmeg. Cream together margarine, sugar and maple syrup in large bowl until fluffy.

Beat in egg. Alternately add flour mixture and buttermilk; beat until smooth. Pour batter into sprayed or lightly greased 23 cm (9 in) square pan. Bake in 180°C (350°F) oven about 40 minutes or until tester inserted in centre comes out clean.

Pear Sauce: Combine 375 mL (1-1/2 cups) water, 50 mL (1/4 cup) each of granulated sugar and maple syrup in saucepan. Bring to a boil; add 4 ripe, firm pears, peeled and halved. Simmer 10 minutes or until tender. Cool slightly.

To serve: Cut cake into 8 pieces. Serve warm cake with a pear half and syrup.

Makes 8 servings.
