2 tbsp (10 mL) olive oil
1 large red onion, chopped
6 cloves garlic, chopped
2 cups (500 mL) smoked salmon, chopped
6 cups (1.5L) vegetable stock
1/2 cup (125 mL) chopped fresh basil
1/4 cup (50 mL) dry sherry
2 tbsp (30 mL) chopped fresh thyme
2 tbsp (30 mL) chopped fresh rosemary
1 tsp (5 mL) Worcestershire sauce
1 tsp (5 mL) black pepper
1/2 tsp (2 mL) salt
2 cups (500 mL) skim milk
1/2 cup (125 mL) chopped fresh parsley

Directions

This fabulous soup is my tribute to the lovely and talented Pamela.

In a large soup pot, heat oil. Add onion, garlic and smoked salmon, and sauté for about 6 to 8 minutes. Add the stock, basil, sherry, thyme, rosemary, Worcestershire sauce, pepper and salt. Bring to a boil. Reduce to a simmer and cook for 20 minutes. Gently stir in milk and allow to simmer another 5 to 10 minutes. Serve hot, garnished with fresh parsley.

Serves 4 to 6.
