Orange Turkey Salad with Spinach

The orange flavour in this turkey salad adds tang and zest to ordinary ingredients that you probably have at home.

Ingredients

1 cup (250 mL) orange juice
1 cup (250 mL) vegetable stock (low-sodium/low fat)
1/4 cup (50 mL) chopped fresh mint OR 1/2 tsp (2 mL) dried
1 medium boned, skinless turkey breast, sliced into strips
2 tbsp (30 mL) canola oil
1 tbsp (15 mL) orange juice concentrate
1 tbsp (15 mL) rice wine vinegar
1 clove garlic, chopped
2-1/2 tsp (12 mL) black pepper
4 cups (1 L) shredded spinach
1 red pepper, sliced
1 large orange, peeled and cut into small wedges
1 tbsp (15 mL) orange zest

Directions

In a sauté pan, combine the orange juice, stock and 1/2 cup (125 mL) of the mint. Bring to a boil; reduce to simmer and add the turkey strips. Poach turkey 15 minutes or until completely white and cooked through. Remove the turkey and allow to cool. In a small mixing bowl, combine the oil, orange juice concentrate, vinegar, garlic, and black pepper. Place the spinach in a medium glass salad bowl. Add the turkey, black pepper and orange wedges. Drizzle with dressing and sprinkle on the orange juice for zest.


Variation: Substitute chicken for turkey, or grilled Portobello mushrooms for a vegetarian option.
