Mashed Potato Delight with Roasted Garlic and Cheese

1 medium onion, chopped
10 cloves roasted garlic, chopped
1 red bell pepper, chopped
15 mL (1 tbsp) Dijon mustard
2 mL (1/2 tsp) dried basil
2 mL (1/2 tsp) chili powder
2 mL (1/2 tsp) sea salt
2 mL (1/2 tsp) black pepper
1.5 L (6 cups) vegetable stock
750 mL (3 cups) mashed potatoes
125 mL (1/2 cup) shredded cheddar cheese
125 mL (1/2 cup) table cream
Don’t throw out those mashed potato leftovers! That’s the ingredient that makes this soup so delightful.
In a large soup pot, combine the onion, roasted garlic, red pepper, mustard, basil, chili powder, salt, black pepper, and stock. Bring to a boil; reduce heat and simmer 10 minutes. Add the mashed potatoes, cheese and cream. Simmer, stirring frequently, another 5 minutes. Serve immediately.
