Ingredients

325 mL (1-1/2 cups) Italian seasoned bread crumbs
125 mL (1/2 cup) minced green onions
45 mL (3 tbsp) butter
500 mL (2 cups) Tre Stelle Grated Parmesan
Cheese Sauce
45 mL (3 tbsp) flour
45 mL (3 tbsp) butter
500 mL (2 cups) milk
3 mL (3/4 tsp) salt
1 mL (1/4 tsp) white pepper
500 mL (2 cups) Tre Stelle Grated Parmesan

Directions

  1. Remove stems from mushrooms and chop stems finely. Melt butter in a skillet, add minced green onion. Cook until onion is semi-transparent. Add mushroom stems and fry until tender. Remove from heat.
  2. For Cheese Sauce. Melt butter in a medium size saucepan over medium high heat. Add flour and stir quickly to a rough batter. Gradually add milk while stirring consistently until smooth and thick. Lower heat, season with salt and pepper, add 1-1/2 cups of the Tre Stelle Grated Parmesan and stir until mixed.
  3. Cover and remove from heat. Place mushroom caps, bottoms up, in a 9 x 12 (30.5cm x 22cm) baking pan. Sprinkle mushroom mixture over caps and seasoned bread crumbs over all. Pour cheese sauce evenly over bread crumbs and top with remaining Tre Stelle Grated Parmesan. Bake in a 375ºF (190º) oven for approximately 40 minutes or until top is nicely brown.
