Mango & Apricot Smoothie

This naturally sweet fruit drink is an excellent light and refreshing beverage. Mangoes and apricots are rich in Vitamin C.

1 large ripe mango
8 ripe apricots

Directions

Peel and pit the mango and roughly chop the flesh. Halve and pit the apricots. Place the mango flesh and apricots in a blender or food processor with 175 mL (3/4 cup) water and blend until smooth. Press the mixture through a sieve and discard the pulp. Pour the juice into glasses and serve immediately, or cover and chill before serving.
