1 cup (250 mL) butter, softened
1 1/2 cups (375 mL) smooth peanut butter
1 cup (250 mL) white sugar
1 cup (250 mL) brown sugar
2 large eggs
2 tsp (10 mL) vanilla extract
3 cups (750 mL) all-purpose flour
2 tsp (10 mL) baking soda
1/2 tsp (1 mL) cinnamon (optional)
- In a large bowl, cream the butter; mix in peanut butter. Add white and brown sugar and continue mixing. Add the eggs and vanilla and mix using a wooden spoon. Then mix in flour, baking soda, and cinnamon (optional). The dough should be soft.
- Form a teaspoonful at a time into a ball and place on an ungreased cookie sheet. Press a floured fork across the middle of each to flatten slightly. Bake at 375°F (190°C) for 15 minutes or until lightly browned.
