3 eggs, separated
125 mL (1/2 cup) sugar
75 mL (1/3 cup) all-purpose flour
1 mL (1/4 tsp) salt
10 mL (2 tsp) grated lemon rind
50 mL (1/4 cup) lemon juice
15 mL (1 tbsp) butter or margarine, melted
175 mL (3/4 cup) milk
Beat egg whites until stiff but not dry. In separate bowl, stir together sugar, flour and salt. Whisk in lemon rind, juice, butter, milk and egg yolks. Fold beaten whites into lemon mixture. Pour into greased 1-quart (1L) baking dish. Place in pan of hot water to 1-inch (2.5 cm) depth. Bake in pre-heated oven at 350ºF (180ºC) for 35 to 40 minutes or until top is lightly browned. Serve warm or cold.
