3/4 cup (150 mL) non-fat sour cream
1/4 cup (50 mL) chopped fresh basil
1/4 cup (50 mL) grated Parmesan cheese
4 cloves garlic, minced
2 tbsp (30 mL) Worcestershire sauce
1 tbsp (15 mL) low-sodium soy sauce
1 tbsp (15 mL) lemon juice
1 tbsp (15 mL) balsamic vinegar
1 tsp (5 mL) anchovy paste or 1 anchovy, mashed
1/2 tsp (2 mL) black pepper
1/2 tsp (2 mL) chili powder

Directions

One of my most popular recipes is a no-mayo, no-oil Caesar dressing, which appeared on the first season of What’s for Dinner? This variation on a variation is even tastier. Enjoy it with romaine lettuce and croutons, and without loads of fat or calories: there are only 29 calories and 0.7 grams of fat per tablespoon.

In a blender or using a hand blender, purée the sour cream, basil, Parmesan cheese, garlic, Worcestershire sauce, soy sauce, lemon juice, balsamic vinegar, anchovy, pepper and chili powder until smooth. Serve over romaine lettuce torn apart: 2 heads if using only the heart sections, or 1 head if using all of it.

Makes 1 cup (250 mL).

Kenny Kick: Replace the non-fat sour cream with non-fat yogurt. Don’t forget, by adding a little apple juice or stock, this recipe makes a great marinade!
