Turkey Breast
1 whole turkey breast
947 mL (4 cups) frozen peaches OR 10 fresh peaches
120 mL (1/2 cup) peach nectar
30 mL (2 tbsp) honey
2 mL (1/2 tsp) cinnamon
1 mL (1/4 tsp) nutmeg
30 mL (2 tbsp) peach schnapps
Dressing
60 mL (1/4 cup) apple juice
475 mL (2 cups) peaches
475 mL (2 cups) bread pieces
120 mL (1/2 cup) walnuts, chopped
2 garlic cloves
2 small onions
30 mL (2 tbsp) olive oil
120 mL (1/2 cup) raisins
1 apple, chopped
120 mL (1/2 cup) parsley, chopped
1 egg
Directions
Preheat oven to to 350ºF (180ºC). In a food processor, mix peaches, nectar, honey, spices and schnapps. Place turkey breast in pan and glaze with mixture. Mix the dressing ingredients together and place in a shallow baking pan. Place in the oven on the rack below the turkey pan. Bake for about 40 to 45 minutes, basting the turkey every 15 minutes.
