375 mL (1 1/2 cups) cornmeal
1 mL (1/4 tsp) salt
375 mL (1 1/2 cups) boiling water
In a medium-sized bowl, stir together the cornmeal and salt. Slowly add the boiling water to the cornmeal mixture, stirring until mixed. In a 30 cm (12 inch) skillet, heat 3 mm (1/8 inch) of oil over moderately high heat. Spoon the cornmeal mixture in 6 mounds into the skillet; flatten the tops slightly but keep the edges irregular. Cook for 2 to 3 minutes on each side or until golden. Using a spatula, remove the corn bread and drain on paper towels. Serve with maple syrup, honey or molasses.
Makes 6 servings.
