1 BUTTERBALL Breast of Young Turkey, thawed
60 mL (4 tbsp) fresh parsley, coarsely chopped
30 mL (2 tbsp) mixed fresh herbs (thyme, oregano, marjoram)
30 mL (2 tbsp) Parmesan cheese, grated
5 mL (1 tsp) olive oil
2 mL (1/2 tsp) lemon juice
2 mL (1/2 tsp) salt
2 mL (1/2 tsp) garlic powder
2 mL (1/2 tsp) black pepper
Preheat barbecue. Combine parsley, herbs, Parmesan cheese, oil, lemon juice, salt, garlic powder, and pepper in medium bowl.
Gently loosen and lift turkey skin from surface of meat. Spread herb blend evenly over breast meat. Replace skin over herb blend. Brush skin with vegetable oil.
Place turkey breast skin side up in foil pan. Place pan on barbecue and close lid. Cook until internal temperature reaches 80°C (170°F) on a meat thermometer and meat is no longer pink in centre (approximately 2 hours for a 2.5 kg/5 lb breast).
