Helen’s Easy Shortbread Cookies

250 mL (1 cup) butter, softened
125 mL (1/2 cup) icing sugar
375 mL (1-1/2 cups) all-purpose flour
Cream butter and icing sugar until smooth; stir in the flour until doughy. Roll a small piece of dough for each cookie and place on an ungreased cookie sheet. With your finger, press a small dimple in the middle, or press a small piece of red or green candied cherry in the middle. Bake at 350ºF (180ºC) for 10 to 12 minutes or until edges are lightly browned. Makes 30 small cookies.
For festive cookies, add a little green and red candied cherry to the top. Make it a family affair by asking the kids to help with this task.
