3 tbsp (45 mL) olive oil
2 stalks celery, finely chopped
1 green bell pepper, chopped
1 medium onion, chopped
2 cloves garlic, chopped
1/2 lb (250 g) very lean ground beef
4 plum tomatoes, chopped
1/2 tsp (2 mL) dried basil
1/2 tsp (2 mL) dried rosemary
6 cups (1.5L) beef stock
1/4 cup (50 mL) red wine
1/2 cup (125 mL) grated Parmesan cheese
This hamburger soup is a one-pot meal. Be sure to buy lean ground beef and be aware that 1 tsp (5 mL) of Parmesan cheese has 2 grams of fat.
In a large soup pot, heat the oil. Add the celery, green pepper, onion and garlic; sauté for 2 minutes or until the onion is translucent. Add the ground beef and sauté until browned. Add the tomatoes, basil, rosemary, stock and wine; simmer for 15 minutes. If the soup reduces too much, add more beef stock. Stir in the Parmesan cheese and serve immediately.
• Replace lean ground beef with lean ground chicken or turkey. Replace beef stock with chicken stock.
• Low-Fat Option: Replace olive oil with canola oil. Replace the lean ground beef with lean ground turkey. Use low-fat beef stock. Use low-fat Parmesan cheese.
