Ingredients

1 cup (250 mL) grated cheddar cheese
1/2 cup (125 mL) light sour cream
2 green onions, chopped
1 tomato, seeded and diced
3 tbsp (45 mL) chopped cilantro leaves
1 jalapeño pepper, finely chopped
1/2 tsp (2 mL) ground cumin
2 cups (500 mL) lean jerk roasted pork, or ham, thinly sliced and cut into strips
10 7-inch (18 cm) tortillas
Salt and pepper

Directions

Combine cheese, sour cream, green onions, tomato, cilantro, jalapeño, and cumin. Mix in pork strips, and season with salt and pepper. Spread mixture evenly on five tortillas. Cover with remaining tortillas, and press down. Grill on medium high for 3 minutes per side.

 

Cut into wedges.

Makes 5 main course servings, or 10 appetizer servings.
