Grilled Pepper Bruschetta made with Tre Stelle Shredded Mozzarella Cheese

Ingredients

2 cups (500 mL) red, green or orange bell pepper, grilled, peeled and sliced
3 tbsp (45 mL) fresh basil, finely chopped
1 tbsp (15mL) Tre Stelle Balsamic Vinegar
8 slices country style bread, grilled
Salt and pepper to taste
1 clove garlic, peeled and sliced in half
1 cup (250 mL) Tre Stelle Shredded Mozzarella Cheese
3 tsp (15 mL) Tre Stelle Olive Oil

Directions

In a medium bowl, combine roasted peppers, salt, black pepper, basil, and vinegar. Rub garlic on both sides of grilled bread slices. Place bread slices on a baking sheet; top with roasted peppers. Sprinkle shredded mozzarella over roasted pepper topping. Drizzle with olive oil. Broil until cheese begins to brown. Serve hot.
