250 mL (1 cup) sour cream
250 mL (1 cup) mayonnaise (use low-fat or nonfat, if desired)
1 small ripe avocado, peeled, pitted, and chunked
2 large scallions, trimmed and chunked
75 mL (1/3 cup) fresh parsley
30 mL (2 tbsp) lemon juice
10 mL (2 tsp) anchovy paste
1 peeled garlic clove
4 mL (1 tsp) dried tarragon, crumbled
2 mL (1/2 tsp) black pepper
1 mL (1/4 tsp) salt
Optional garnishes avocado slices, parsley sprigs

Directions

Working in batches if necessary, purée all ingredients (except garnishes) in a blender at high speed or in a food processor until smooth, scraping down container sides as needed. Transfer to a small bowl, smooth plastic wrap flat on surface of dip, and refrigerate 2 to 3 hours. If mixture seems thick, mix in a little additional mayonnaise. Also, taste and adjust seasonings as needed. To serve, spoon into a serving bowl. Garnish, if desired, with slices of avocado or parsley sprigs. Serve with assorted chips or crackers.

Makes about 3 cups.
