Ingredients

10 1/2 oz (300g) goat cheese
1 egg, lightly beaten
1 clove garlic, minced
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) black pepper
1/2 tsp (2 mL) dried thyme, crumbled
10 sheets phyllo pastry
4 tbsp (60 mL) melted butter or olive oil

Directions

Preheat the oven to 350°F (180°C). In a medium-size bowl, combine cheese, egg, garlic, salt, pepper, and thyme.

Place 1 sheet of phyllo on a clean, damp cloth, and brush lightly with butter. Top with a second phyllo sheet; brush with butter. Repeat 8 more times.

Spoon cheese mixture across short end of stacked sheets, leaving 1 1/2 to 2-inch margins. Fold side margins over filling, then roll up jelly-roll fashion, ending with the seam on the bottom.

Place strudel on a parchment-lined baking sheet, brush top with remaining melted butter, and bake until lightly browned — about 25 minutes. Slice and serve hot.

Makes 8 servings.
