Made with fresh Canadian Turkey, this epic creation takes the breakfast sandwich concept to a whole new level with its layered ingredients and beautiful, colourful aesthetic. Bon appetit!
Put a large non-stick frying over medium-to-low heat. Add butter.
Using a small glass, cut two holes in your bread, like using a cookie cutter.
Place the bread in the frying pan and crack the eggs into the holes. Cook for 3-4 minutes or until you think it’s safe to flip, then gently flip, to not break yolks. The aim is to have runny yolks to enjoy with the turkey and avocado. Cook for a minute or two and remove from heat.
Add turkey slices to the pan to warm for a minute.
Assemble sandwich with mayo, and turkey, and add avocado to the top.
Tip: Best enjoyed with a Caesar on a sunny weekend morning!
