1/2 cup (125 mL) fresh strawberries
1/4 cup (50 mL) low-fat or non-fat yogurt
1 clove garlic, chopped
1/4 cup (50 mL) olive oil
2 tbsp (30 mL) vinegar
1 tbsp (15 mL) lemon juice
1 tsp (5 mL) sugar or sweetener equivalent
1 tsp (5 mL) dried thyme
1/2 cup (125 mL) croutons (optional)
Experiment with different types of lettuce. You can add whatever you want to the salad, but plain is just fine.
In a blender or with a hand blender, purée strawberries, yogurt, garlic, oil, vinegar, lemon juice, sugar, and thyme till thick but not liquid. Drizzle the dressing over the lettuce and toss well. Garnish with croutons (if using), freshly ground pepper and strawberries.
Makes 3-4 servings.
