Frozen Vanilla-Orange Mousse

Ingredients

250 mL (1 cup) evaporated milk
50 mL (1/4 cup) malted milk powder
5 mL (1 tsp) grated orange zest
2 envelopes unflavoured gelatin
625 mL (2 1/2 cups) orange juice
125 mL (1/2 cup) sugar
5 mL (1 tsp) vanilla extract
0.5 mL (1/8 tsp) salt

Directions

In a large bowl, with an electric mixer, combine the evaporated milk, malted milk powder, and orange zest. Place in the freezer until ice crystals begin to form, about 1 hour. In a glass measuring cup, sprinkle the gelatin over 125 mL (1/2 cup) of the orange juice and let stand for 5 minutes or until softened. Place the cup in a pan of simmering water and heat for 4 minutes or until the gelatin has dissolved. Cool to room temperature.

Beat the partially frozen evaporated-milk mixture until thick. Gradually beat in the sugar. Add the gelatin mixture. Beat in the remaining 500 mL (2 cups) orange juice, the vanilla, and salt. Spoon into 4 dessert bowls and chill for 2 hours or until set.

Makes 4 servings.
