Frozen Strawberry-Yogurt Pie

Crust
8 oz (250 mL) graham wafer crumbs
1/4 cup (50 mL) melted butter or margarine
1 1/2 tbsp (25 mL) sugar
Filling
3 cups (750 mL) sliced fresh or frozen strawberries
1/2 cup (125 mL) sugar
1 cup (250 mL) liquid from strawberries (or liquid plus water)
1 envelope unflavoured gelatin
2 cups (500 mL) plain low-fat yogurt
Directions
Combine ingredients for the crust. Press evenly into bottom and sides of a deep 9 (23 cm) pie plate. Chill 30 minutes. For filling, combine strawberries and sugar. Let stand 30 minutes.
Drain strawberries; reserve 1 cup (250 mL) liquid. Soak gelatin in liquid from strawberries about 5 minutes.
Heat mixture slowly to dissolve gelatin. Combine strawberries, gelatin mixture and yogurt. Purée in blender until smooth (about 2 min).
Pour mixture into crust. Freeze until firm (about 4 hrs). Let pie stand 30 minutes at room temperature before serving.
Makes 8 servings.
