Fresh Figs with Vanilla Yogurt

Ingredients

175 mL (3/4 cup) plain yogurt
15-30 mL (1-2 tbsp) honey
  A few drops of vanilla extract
8 fresh figs
  Finely grated dark chocolate for sprinkling (optional)

Directions

Put the yogurt, honey, and vanilla extract in a bowl and gently fold together. Cover and chill in the refrigerator while preparing the figs. Using a sharp knife, cut the stalk ends off the figs; then cut a deep cross in the top of each fruit. Using your fingers, gently press each fig open to make four petals. Spoon some vanilla yogurt into the centre of each fig, or alongside the fruit, and serve immediately, sprinkled with a little grated chocolate, if desired.

Makes 4 servings.
