90 mL (6 tbsp) olive oil 30 mL (2 tbsp) white wine or cider vinegar, or lemon juice
5-10 mL (1-2 tsp) Dijon mustard
Dash of sugar
Small clove garlic, crushed
15-30 mL (1-2 tbsp) chopped fresh mixed herbs
Sea salt
Freshly ground black pepper
Directions
Put all the ingredients in a small bowl and whisk together until thoroughly mixed. Alternatively, place all the ingredients in a clean, screw-top jar, seal, and shake well until thoroughly mixed. Adjust the seasoning and serve immediately or keep in a screw-top jar in the refrigerator for up to 1 week. Shake thoroughly before using.
