Ingredients

Dressing
1/4 cup (50 mL) olive oil
2 tbsp (30 mL) lemon juice
1 tsp (5 mL) sugar
1 tsp (5 mL) white wine vinegar
Salad
1 medium fennel bulb, chopped
1 medium cucumber, chopped
1 sweet red pepper, seeded and chopped
1/2 lb (250 g) mild goat cheese
1/2 cup (125 mL) freshly chopped parsley
1/4 cup (50 mL) freshly chopped mint

Directions

Goat cheese is the seventh wonder of the culinary world; fennel the sixth.

To make the dressing
In a medium bowl, combine the ingredients for the salad dressing: olive oil, lemon juice, sugar, vinegar, and pepper. Mix well.

To prepare the salad
Place the chopped fennel, cucumber, red pepper, goat cheese, parsley and mint in a salad bowl. Pour dressing over salad; toss and serve.

Makes 4 servings.
