2 lbs (1 kg) lean ground beef or ground turkey
2 tbsp (30 mL) curry paste or 1 tbsp (15 mL) curry powder OR 1 tbsp (15 mL) chili powder.
1/2 cup (125 mL) bread crumbs
1/2 cup (125 mL) yogurt or sour cream
1/2 cup (125 mL) fresh coriander, chopped
1 small onion, chopped
2 cloves garlic, minced
1 red or green pepper, chopped
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
1/2 tsp (2 mL) chili pepper
1 tsp (5 mL) cumin
2 mangoes, peeled, seeded
I always crave a hearty meatloaf in winter.
Preheat oven to 350°F (180°C). In a mixing bowl combine the lean ground beef, curry paste, egg, bread crumbs, yogurt, coriander, onion, garlic, red or green pepper, salt and pepper. Place mangoes in centre and form a loaf around them. Mix and place in baking dish. Bake in the oven for 25-30 minutes.
Makes 4 servings.
Kenny Kick: Variation: Replace the mango with one finely chopped apple, the curry with 1/2 tsp cinnamon, the yogurt or sour cream with apple sauce, and fiinally the coriander with 1/4 cup fresh thyme.
