Ingredients

500 g (1 lb) Kirby cucumbers, sliced 5 mm (1/4 in) thick (about 925 mL/3 3/4 cups)
2 green onions, including tops, thinly sliced (50 mL/1/4 cup)
30 mL (2 tbsp) bottled chili sauce
20 mL (1 tbsp + 1 tsp) lime juice
10 mL (2 tsp) reduced-sodium soy sauce
2 mL (1/2 tsp) sugar
1 mL (1/4 tsp) ground ginger
1 mL (1/4 tsp) hot red pepper sauce

Directions

In a medium-size bowl, combine the cucumbers and green onions. In a small bowl, whisk together the chili sauce, lime juice, soy sauce, sugar, ginger, and red pepper sauce. Pour the dressing over the cucumbers and toss to coat. Serve with broiled fish or chicken.
