3 tbsp (45 mL) butter or margarine
1/3 cup (75 mL) minced shallots
1 1/4 cups (300 mL) heavy cream
1 cup (250 mL) light cream
1/2 tsp (2 mL) salt
Pinch ground nutmeg
3/4 cup (150 mL) grated Parmesan cheese
1 lb (500 g) fettuccine, cooked and drained
In a medium-size saucepan over moderate heat, melt butter. Add shallots and sauté until soft — 3 to 4 minutes. Stir in heavy cream, light cream, salt, and nutmeg and bring to a boil over high heat, stirring constantly. Reduce the heat to moderately low and simmer, uncovered, until sauce thickens — 4 to 5 minutes. Stir in Parmesan.
Transfer fettuccine to a heated serving bowl, pour sauce over all, and toss well.
Makes 4 servings.
