4 turkey cutlets
1 egg, beaten
2/3 cup (150 mL) fresh bread crumbs
1/4 cup (50 mL) shredded coconut
3 tbsp (45 mL) butter or margarine
3/4 cup (175 mL) whole cranberry sauce
1/4 cup (50 mL) orange juice
1 tsp (5 mL) orange marmalade
1/4 tsp (1 mL) Dijon mustard
Spread cutlets lightly with orange marmalade. Roll up, tucking edges in, and secure with toothpicks. Dust with flour. Brush with beaten egg. Combine breadcrumbs and coconut and coat turkey with mixture. Melt 2 tbsp (30 mL) butter in fry pan and brown cutlets. Transfer to baking dish. Melt 1 tbsp (15 mL) butter and drizzle over cutlets. Bake at 350°F (180°C) for 30 minutes. To prepare sauce, combine ingredients and bring just to boil.
Makes 4 servings.
