Cool Tomato and Basil Soup

This soup is refreshing on a warm day. Serve cold as a starter with something grilled, or as a whole meal with thick slices of fresh bread.

Ingredients

4 cups (1 L) vegetable stock
1 can (28 oz) chopped stewed tomatoes
4 ripe tomatoes, chopped
1 cup (250 mL) table cream
3/4 cup (75 mL) chopped fresh basil
1/2 cup (125 mL) tomato juice
1/4 cup (50 mL) chopped fresh dill
1 medium onion, chopped
2 cloves garlic, chopped
2 celery stalks, chopped
1 tsp (5 mL) dried basil
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) black pepper

Directions

  1. In a large bowl combine the stock, stewed tomatoes, ripe tomatoes, cream, basil, tomato juice, dill, onion, garlic, celery, basil, salt, and pepper. Using a hand blender, or in a food processor, purée until smooth. If using a food processor, return the soup to the bowl.
  2. Refrigerate, covered, for at least 1 hour prior to serving. Serve cold in soup bowls.
