1 large cantaloupe (or honeydew) or 2 medium
1 tbsp (15 mL) mint, chopped
3 tbsp (45 mL) sugar
2/3 cup (150 mL) low fat plain yogurt
1/2 cup (125 mL) white wine
8 mint leaves
Peel cantaloupe and put in food processor. Add chopped mint and sugar. Mix until puréed. Pour mixture in cold bowl. Add yogurt and wine. Put bowl on ice and stir until the soup becomes cold. Serve cold, garnished with mint leaves.
Makes 4 servings.
