125 mL (1/2 cup) firmly packed light brown sugar
15 mL (1 tbsp) all-purpose flour
6 mL (1 1/4 tsp) ground cinnamon
2 mL (1/2 tsp) ground cardamom
1.5 L (6 cups) thinly sliced, peeled, tart cooking apples
1 store-bought or homemade pie crust
150 mL (2/3 cup) firmly packed light brown sugar
125 mL (1/2 cup) all-purpose flour
30 mL (2 tbsp) butter

Directions

Preheat the oven to 190°C (375°F). In a large bowl, stir together the 125 mL (1/2 cup) brown sugar, the 15 mL (1 tbsp) flour, 3 mL (3/4 tsp) of the cinnamon, and the cardamom. Add the apples; toss until apples are coated. Line a 22.5 cm (9 inch) pie plate with the pie crust.

Trim crust to 1 cm (1/2 inch) beyond edge of pie plate. Fold under extra crust and crimp edge. Spoon the apple mixture into crust. In a medium-size bowl, stir together the 150 mL (2/3 cup) brown sugar, 125 mL (1/2 cup) flour, and the remaining 2 mL (1/2 tsp) cinnamon. Cut in the butter (tip, following). Sprinkle over the apple mixture.

Bake for 40 to 45 minutes or until apples are tender and crumb topping is golden. Cool on a wire rack for 2 hours before serving.

Cutting in Butter: Using a pastry blender, cut the butter into the brown sugar mixture until the pieces look like coarse crumbs, or, use two table knives to cut crisscross through the mixture until the butter is in coarse crumbs.
