Chinese-Style Baked Potatoes

Ingredients

3/4 cup (175 mL) sliced mushrooms
1/4 cup (50 mL) sliced green pepper
1/4 cup (50 mL) chopped onion
1 clove garlic, crushed
2 tsp (10 mL) oil
3/4 cup (175 mL) chopped tomato
1 tsp (5 mL) soy sauce
1/2 tsp (2 mL) grated fresh ginger
1/4 tsp (1 mL) sugar
2 baked potatoes

Directions

  1. Stir-fry first 4 ingredients in oil until tender-crisp.
  2. Add tomato, stir-fry for 3 minutes more. Add soy sauce, ginger and sugar; heat through.
  3. Cut potatoes almost in half lengthwise and top with vegetable mixture.
