Chilled Peach Soup with Parsley

4 medium peaches, chopped
2 cups (500 mL) orange juice
2 cups (500 mL) peach nectar
1 cup (250 mL) plain yogurt
1/4 cup (50 mL) chopped fresh parsley
1 tbsp (15 mL) lemon juice
1 tsp (5 mL) brown sugar
Without peaches this soup is the pits!
In a large bowl, combine the peaches, orange juice, peach nectar, yogurt, parsley, lemon juice, and sugar. In a food processor, purée the mixture (in batches, if necessary), or use a hand blender. Chill well before serving.
Makes 4 servings.
